What is plain naan?
Naan is a leavened, oven-baked flatbread from North India and the wider Punjabi region. The word itself simply means "bread" in Persian. Unlike chapati or roti, which are cooked on a flat griddle, naan is slapped directly onto the inner wall of a tandoor — a vertical clay oven heated to extreme temperatures. How we make plain naan at Inder'n in Kastrup
The dough is mixed fresh every day in our kitchen on Sirgræsvej 4. We use plain flour, yoghurt, a small amount of yeast, salt, sugar and water — that's it. The yoghurt is what gives naan its tang and its tender bite; the yeast gives it lift. After mixing, the dough rests for several hours so the gluten relaxes and the flavour develops.
When you place an order, the steps are quick:
- A ball of dough is hand-stretched into a teardrop shape on a floured board.
- The back of the dough is moistened so it sticks to the tandoor wall.
- It bakes against the clay at roughly 400°C for 60–90 seconds.
- A long iron hook lifts it out the moment it puffs and bubbles.
- We brush it with melted butter and box it straight away.
This is why we can't pre-bake naan and reheat it. Once the bread cools, it stiffens. Plain naan only tastes the way it should when it is fresh out of the tandoor — which is why we time the bread to be ready when the rest of your order is finishing.
