What makes a proper garlic naan

Naan is a leavened flatbread from North India, traditionally baked by slapping the stretched dough onto the inside wall of a very hot clay tandoor oven. The high heat — usually 400–500°C — puffs the dough quickly, giving it that signature bubbled, chewy texture with charred leopard spots on the bottom.

A garlic naan takes that same bread and adds three things just before it goes into the oven: finely chopped fresh garlic pressed into the dough, a brush of ghee or melted butter when it comes out, and a scatter of chopped cilantro. What to order with garlic naan

Garlic naan is designed for sauce. The buttery, slightly chewy bread is the best tool in Indian food for scooping up a thick curry or dal — better than a fork, often better than rice if the sauce is the star. Our picks for pairing:
