What is garam masala?

Garam masala is a blend of spices, not one spice. Its name roughly means “warm spice mix”. Warm describes the aroma, rather than a promise that your curry will be hot with chilli. What is in the blend?

There is no single fixed recipe. Cumin, coriander, cardamom, cinnamon or cassia, cloves and black pepper are common ingredients. Some blends also include bay leaf or nutmeg.
